Bring a small pot of water to a boil, carefully lower in the eggs, and simmer for 7 minutes.
Transfer eggs to an ice bath for 3 minutes, then peel and slice in half.
In a skillet over medium heat, cook the ground turkey until browned and no longer pink.
Add the fresh spinach to the skillet and sauté for 1 minute until just wilted.
Divide the turkey, spinach, and roasted sweet potatoes into a bowl and top with the eggs.
