Roast in the oven for 20-25 minutes, flipping halfway through, until the tofu is golden and the vegetables are tender-crisp.
While the vegetables roast, combine the tomato puree, vegetable broth, chickpeas, and the remaining spices in a medium saucepan over medium heat.
Bring the sauce to a gentle simmer and cook for 10 minutes to allow the flavors to meld.
Stir the nutritional yeast into the sauce until well combined and slightly thickened.
Add the roasted tofu and vegetables into the saucepan, tossing gently to coat everything in the curry sauce.
Serve warm in a bowl, optionally garnished with fresh cilantro or a squeeze of lime.
