1 cup Asparagus spears
0.5 medium Sweet potato
0.5 tsp Lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
In a small bowl, whisk together the minced garlic, chopped rosemary, thyme, sea salt, black pepper, and half of the olive oil to create a paste.
Rub the herb paste evenly over all sides of the pork tenderloin.
Slice the sweet potato into thin rounds and trim the woody ends off the asparagus.
Toss the sweet potatoes and asparagus with the remaining olive oil and a pinch of salt.
Place the pork tenderloin in the center of the baking sheet and arrange the vegetables in a single layer around it.
Roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C) and the sweet potatoes are tender.
Remove from the oven and let the pork rest for 5 minutes before slicing into medallions.
Drizzle the lemon juice over the roasted asparagus and serve immediately.
