In a small oven-safe baking dish, spread a thin layer of the red enchilada sauce across the bottom.
Layer half of the corn tortilla strips over the sauce, followed by the seasoned beef and vegetable mixture and another drizzle of sauce.
Top with the remaining tortilla strips, the rest of the enchilada sauce, and the shredded cheddar cheese.
