7.5 oz Wild Salmon Fillet
80g Sweet Potato, cubed
100g Fresh Green Beans
1 tsp Olive Oil
1 clove Garlic, minced
PREPARATION
Preheat your oven to 400°F (200°C).
Toss the cubed sweet potatoes with half of the olive oil and a pinch of salt, then spread them on a baking sheet.
Roast the sweet potatoes for 20-25 minutes until they are tender and slightly browned.
While the potatoes roast, season the salmon fillet with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes, then flip and cook for another 3-4 minutes until cooked through.
In a separate small pan or the same skillet after removing the salmon, sauté the green beans with a splash of water for 3 minutes until tender-crisp.
Add the minced garlic to the green beans and sauté for 1 more minute until fragrant.
Plate the seared salmon alongside the roasted sweet potatoes and garlic green beans, serving immediately with a fresh lemon wedge if desired.
