Roasted Vegetable Buddha Bowl with Tahini
Crispy tofu and roasted chickpeas are tossed with vibrant broccoli and served over fluffy quinoa, drizzled with a creamy, velvety lemon-tahini dressing.
INGREDIENTS
9 oz Extra firm tofu
2 tbsp Chickpeas
2 tbsp Cooked quinoa
1.5 cups Broccoli florets
0.25 tbsp Avocado oil
4 tbsp Nutritional yeast
1 tbsp Hemp hearts
0.5 tbsp Tahini
1 tbsp Lemon juice
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Press the extra firm tofu with a heavy object for 10 minutes to remove excess moisture, then cut into 1-inch cubes.
In a large bowl, toss the tofu cubes, chickpeas, and broccoli florets with avocado oil, garlic powder, sea salt, and black pepper.
Spread the mixture in a single layer on the prepared baking sheet and roast for 25 minutes, flipping halfway through, until the tofu is golden and the broccoli is tender.
While roasting, prepare the dressing by whisking together the tahini, lemon juice, nutritional yeast, and a tablespoon of warm water until smooth.
Divide the fluffy cooked quinoa into the base of a bowl and top with the roasted vegetable and tofu mixture.
Garnish with hemp hearts and drizzle the velvety lemon-tahini dressing over the top before serving.
