Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon and garlic green beans served over cauliflower mash with a finishing touch of zesty lemon.
INGREDIENTS
7 ounces Wild-Caught Salmon Fillet
2 cups Cauliflower Florets
1.5 cups Fresh Green Beans
2 cloves Garlic
1 teaspoon Extra Virgin Olive Oil
1 teaspoon Ghee
1 tablespoon Lemon Juice
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook until very tender, about 10-12 minutes.
While cauliflower steams, heat olive oil in a skillet over medium heat and sauté the green beans and minced garlic until the beans are crisp-tender.
Season the salmon fillet with salt and pepper, then heat ghee in a separate non-stick skillet over medium-high heat.
Place the salmon skin-side down in the hot skillet and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 3 minutes.
Transfer the steamed cauliflower to a bowl and mash until smooth, adding a pinch of salt and a splash of lemon juice if desired.
Plate the cauliflower mash and green beans alongside the seared salmon and finish with a squeeze of fresh lemon.
