Add the diced onion and sliced mushrooms to the skillet, sautéing for 4-5 minutes until the vegetables are softened and browned.
Add the ground beef to the skillet, breaking it up with a spatula, and cook until browned and no longer pink.
Stir in the minced garlic, dried thyme, remaining salt, and pepper, cooking for 1 minute until fragrant.
Pour in the beef broth and coconut aminos, scraping the bottom of the pan to release any flavorful browned bits.
Simmer the beef mixture for 2-3 minutes until the liquid has slightly reduced and coated the meat.
Plate the beef and mushroom mixture alongside the roasted asparagus and serve immediately.
