Seared Salmon Fillet with Garlic Green Beans and Brown Rice
Pan-seared salmon served with crisp garlic-sautéed green beans and fluffy brown rice, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
8.5 oz Wild Atlantic Salmon
0.5 cup cooked Brown Rice
1.5 cups fresh Green Beans
1 tbsp Avocado Oil
2 cloves Garlic, minced
1 tbsp fresh Lemon Juice
PREPARATION
Prepare the brown rice according to package instructions and set aside.
Pat the salmon fillet completely dry with paper towels and season with a pinch of sea salt and black pepper.
Heat half of the avocado oil in a large non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4 to 5 minutes until the skin is crispy.
Flip the salmon carefully and cook for another 2 to 3 minutes until cooked through to your preference, then remove from the pan.
In the same skillet, add the remaining avocado oil and the trimmed green beans.
Sauté the green beans for 5 minutes until they are tender-crisp and slightly charred.
Add the minced garlic to the green beans and cook for 1 minute until fragrant.
Plate the salmon alongside the brown rice and garlic green beans.
Drizzle the fresh lemon juice over the salmon and vegetables before serving.
