Add the shrimp to the skillet in a single layer and cook for 2-3 minutes per side until they are pink, opaque, and fully cooked.
Stir in the lemon juice, the remaining salt and pepper, and fresh parsley to coat the shrimp before serving alongside the roasted potatoes and broccoli.
