Garlic Butter Shrimp Scampi with Linguine
Sautéed succulent shrimp tossed in a velvety garlic-butter sauce with whole grain linguine and a bright squeeze of fresh lemon.
INGREDIENTS
8 oz Shrimp
1.5 oz Whole grain linguine
1 tbsp Grass-fed butter
1 tsp Extra virgin olive oil
3 cloves Garlic
0.25 tsp Red pepper flakes
1 tbsp Fresh parsley
1 tbsp Lemon juice
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Bring a large pot of salted water to a boil and cook the linguine according to package directions until al dente.
Reserve 2 tablespoons of the starchy pasta water before draining the noodles.
Pat the shrimp dry with paper towels and season them evenly with the sea salt and black pepper.
Heat a large skillet over medium heat and add the extra virgin olive oil and grass-fed butter.
Add the minced garlic and red pepper flakes to the skillet, sautéing for 1 minute until the aroma is fragrant.
Add the shrimp in a single layer and cook for 2 minutes per side until they are pink and opaque.
Stir the cooked linguine and reserved pasta water into the skillet, tossing well to coat the noodles in the garlic-butter sauce.
Remove the skillet from the heat, stir in the fresh parsley and lemon juice, and serve immediately.
