Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over creamy garlic mashed cauliflower with a side of steamed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
7 ounces Wild Atlantic Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Fresh Green Beans
1.5 teaspoons Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Steam the cauliflower florets and the garlic clove in a steamer basket over boiling water until very tender, about 10-12 minutes.
During the last 5-7 minutes of steaming the cauliflower, add the green beans to the steamer basket and cook until crisp-tender and bright green.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crispy and the flesh is cooked through.
Transfer the steamed cauliflower and garlic to a bowl and mash with a fork or immersion blender until smooth and creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve alongside the steamed green beans.
