Seared Salmon with Steamed Green Beans and Herb Cauliflower Mash
Wild-caught salmon seared until golden and served over a garlic-herb cauliflower mash with snap-fresh steamed green beans.
INGREDIENTS
6 oz Wild Caught Salmon Fillet
12 oz Cauliflower Florets
4 oz Green Beans
2 tsp Extra Virgin Olive Oil
1 clove Garlic
1 tbsp Fresh Parsley
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until they are very tender, about 10-12 minutes.
While the cauliflower steams, place the green beans in a separate steamer basket and cook until they are vibrant and crisp-tender, about 5-7 minutes.
Transfer the cooked cauliflower to a food processor with the minced garlic and fresh parsley, then blend until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season lightly with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the exterior is golden and the fish flakes easily.
Serve the seared salmon over a generous bed of the herb cauliflower mash with the steamed green beans on the side.
