Seared Salmon with Steamed Asparagus and Cauliflower Mash
Pan-seared salmon fillet served over a velvety garlic cauliflower mash and tender steamed asparagus, finished with a squeeze of bright lemon.
INGREDIENTS
8 oz Wild Salmon Fillet
2 cups Cauliflower florets
1 cup Asparagus spears
1 tsp Ghee
1 tsp Olive Oil
1 tsp Garlic Powder
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until they are very tender, about 10 to 12 minutes.
Add the asparagus spears to the steamer during the last 4 minutes of cooking until they are bright green and crisp-tender.
Transfer the steamed cauliflower to a food processor and blend with ghee, garlic powder, and a pinch of salt until smooth and velvety.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the pan and sear for 4 to 5 minutes per side until the skin is golden and the fish flakes easily.
Serve the salmon over a bed of the cauliflower mash with the asparagus on the side and a fresh lemon wedge.
