1.5 cups Cauliflower florets
1 cup Green Beans
1.5 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
2 tbsp Nonfat Plain Greek Yogurt
PREPARATION
Steam the cauliflower florets until very tender, approximately 10-12 minutes.
While cauliflower steams, trim the green beans and mince the garlic.
Heat half of the olive oil in a skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes until the skin is golden and crisp.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached, then remove from the pan to rest.
In the same skillet, add the remaining oil and sauté the green beans and garlic for 5 minutes until the beans are tender-crisp.
Drain the steamed cauliflower and blend or mash with the Greek yogurt and a pinch of salt until smooth and creamy.
Plate the mashed cauliflower, top with the seared salmon, and serve the garlic green beans on the side.
