Pan-Seared Tofu with Peanut Sauce
Crispy pan-seared tofu and vibrant broccoli florets tossed in a creamy, savory peanut sauce for a satisfying meal with a velvety finish.
INGREDIENTS
10 oz Extra firm tofu
0.5 cup Shelled edamame
1 cup Broccoli florets
0.5 tbsp Natural creamy peanut butter
1 tbsp Tamari
1 tsp Rice vinegar
0.5 tsp Garlic powder
0.5 tsp Ground ginger
0 tsp Avocado oil
1 tbsp Water
PREPARATION
Press the extra firm tofu for at least 15 minutes to remove excess moisture and then cut into 1-inch cubes.
In a small mixing bowl, whisk together the peanut butter, tamari, rice vinegar, garlic powder, ground ginger, and water until the sauce is smooth and emulsified.
Heat the avocado oil in a large non-stick skillet over medium-high heat.
Add the tofu cubes to the hot skillet and sear for 3 to 4 minutes per side until they are golden brown and crispy on all edges.
Add the broccoli florets and shelled edamame to the skillet, sautéing for about 5 minutes until the broccoli is tender-crisp.
Pour the peanut sauce over the tofu and vegetables, tossing quickly to coat everything evenly.
Remove from the heat once the sauce has thickened slightly and serves immediately.
