Seared Salmon with Roasted Broccoli and Garlic Mashed Cauliflower
Pan-seared salmon served with roasted broccoli and garlic-infused mashed cauliflower, finished with a bright squeeze of zesty lemon.
INGREDIENTS
6 oz Salmon Fillet
1.5 cups Broccoli Florets
2 cups Cauliflower Florets
1 tsp Extra Virgin Olive Oil
1 clove Garlic
0.5 tbsp Lemon Juice
Pinch of Sea Salt and Black Pepper
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the broccoli florets with half of the olive oil and a pinch of salt, then spread them on the baking sheet and roast for 15-20 minutes until the edges are crispy.
While the broccoli roasts, place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Transfer the steamed cauliflower to a blender or food processor with the minced garlic and a pinch of salt, blending until smooth and creamy.
Season the salmon fillet with salt and pepper. Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes, then flip and cook for another 3-4 minutes until the salmon is cooked through and the surface is golden.
Plate the salmon over a generous bed of garlic mashed cauliflower with the roasted broccoli on the side, finishing with a fresh squeeze of lemon juice.
