PREPARATION
Drain the silken tofu and pat it dry gently with a paper towel.
Heat a non-stick skillet over medium heat and add a splash of water or a teaspoon of tamari to prevent sticking.
Add the minced garlic and grated ginger to the skillet, sautéing for about 1 minute until fragrant.
Place the tofu in the pan and break it into large, bite-sized chunks using a wooden spoon or spatula.
