Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Scrub the Russet potato thoroughly, pierce it several times with a fork, and rub the skin with olive oil and a pinch of sea salt.
Place the potato on the baking sheet and roast for 45 to 60 minutes, or until the skin is crisp and the inside is tender when pierced with a knife.
While the potato roasts, cook the turkey bacon in a skillet over medium heat until crispy, then remove and crumble into small bits.
In the same skillet, add the ground turkey, garlic powder, remaining sea salt, and black pepper, sautéing until the meat is browned and cooked through.
Once the potato is finished, slice it open lengthwise and fluff the interior with a fork.
Stuff the potato with the cooked ground turkey and crumbled bacon, then sprinkle the cheddar cheese over the top.
Return the potato to the oven for 2 to 3 minutes until the cheese is completely melted.
Top with a dollop of Greek yogurt and garnish with freshly sliced green onions before serving.
