Grilled Steak Salad with Mixed Greens and Green Beans
Tender grilled sirloin served over a bed of mixed greens and blanched green beans, finished with a drizzle of balsamic vinaigrette and creamy avocado.
INGREDIENTS
8 oz Top Sirloin Steak
1 cup Green Beans, trimmed
5 spears Asparagus
2 cups Mixed Greens
1/4 Avocado, sliced
1.5 tbsp Extra Virgin Olive Oil
1 tbsp Balsamic Vinegar
0.5 tsp Garlic Powder
Salt and Black Pepper to taste
PREPARATION
Season the sirloin steak with garlic powder, salt, and black pepper on both sides.
Preheat a grill or cast-iron skillet over medium-high heat and cook the steak for 4-5 minutes per side for medium-rare, then let it rest for 5 minutes.
While the steak cooks, bring a small pot of water to a boil and blanch the green beans and asparagus for 3 minutes until tender-crisp, then immediately plunge them into ice water to stop the cooking.
In a small bowl, whisk together the extra virgin olive oil and balsamic vinegar to create the dressing.
Place the mixed greens in a large bowl and toss with half of the dressing.
Slice the rested steak against the grain into thin strips.
Top the greens with the blanched green beans, asparagus, sliced avocado, and the grilled steak.
Drizzle the remaining dressing over the top and serve immediately.
