0.25 tsp Sea salt
0.25 tsp Black pepper
1 cup Baby spinach
PREPARATION
Rinse the quinoa under cold water and combine with 0.5 cup water in a small saucepan; bring to a boil, then simmer covered for 12-15 minutes until fluffy.
While quinoa cooks, pat the tuna steak dry with paper towels and season both sides with half of the sea salt and black pepper.
Heat the olive oil in a cast-iron skillet over medium-high heat until shimmering.
Sear the tuna for 1.5 to 2 minutes per side for a perfect medium-rare, or longer depending on thickness and preference.
Remove tuna from the pan and let it rest for 3 minutes before slicing into thick strips.
