5.5 ounces Atlantic Salmon Fillet
3 cups Cauliflower Florets
1 tablespoon Ghee
1.5 tablespoons Extra Virgin Olive Oil
2 cups Fresh Baby Spinach
3 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
Transfer steamed cauliflower to a food processor or bowl; add ghee and half the minced garlic, then blend until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat one tablespoon of olive oil in a non-stick skillet over medium-high heat.
Place salmon in the pan skin-side down and sear for 4-5 minutes until the skin is golden and crispy.
Flip the salmon and cook for another 2-3 minutes until cooked to your preference, then remove from the pan.
In the same skillet, add the remaining half tablespoon of olive oil and the rest of the garlic.
