Divide the turkey and vegetable mixture evenly among the prepared muffin wells.
Pour the whisked eggs over the filling in each well, filling them about three-quarters of the way to the top.
Bake for 20 to 25 minutes until the egg bites are set in the center and slightly golden on the edges.
Allow the bites to cool for a few minutes before removing them from the tin to serve warm.
