Garlic Butter Shrimp Scampi with Linguine
Succulent shrimp sautéed in a fragrant garlic-butter sauce and tossed with whole wheat linguine for a bright, citrusy finish.
INGREDIENTS
7 oz Large shrimp
1.5 oz Whole wheat linguine
0.5 tbsp Grass-fed butter
0.5 tbsp Extra virgin olive oil
3 cloves Garlic
0.25 tsp Red pepper flakes
1 tbsp Lemon juice
1 tsp Lemon zest
2 tbsp Fresh parsley
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Bring a large pot of salted water to a boil and cook the whole wheat linguine until al dente according to package instructions.
While the pasta cooks, pat the shrimp dry with a paper towel and season them with the sea salt and black pepper.
In a large skillet over medium heat, melt the grass-fed butter with the extra virgin olive oil.
Add the minced garlic and red pepper flakes to the skillet, sautéing for 1 minute until the aroma is fragrant and the garlic is golden.
Add the shrimp to the skillet in a single layer and cook for 2 minutes per side until they are pink, curled, and just cooked through.
Drain the linguine and add it directly to the skillet along with the lemon juice and lemon zest.
Toss the pasta and shrimp together with the fresh parsley until the noodles are glossy and well-coated in the light sauce.
