Spicy Gochujang Pork Belly Skewers
Pork tenderloin cubes grilled with a spicy gochujang glaze, served alongside a crisp cucumber salad for a refreshing crunch.
INGREDIENTS
7 oz Pork tenderloin
1 tbsp Gochujang paste
1 tbsp Tamari
1 tsp Honey
2 tsp Sesame oil
1 clove Garlic
0.5 tsp Fresh ginger
1 cup Cucumber
1 tsp Rice vinegar
1 tsp Sesame seeds
1 whole Green onion
PREPARATION
Cut the pork tenderloin into 1-inch cubes to mimic the shape of traditional pork belly.
In a small bowl, whisk together the gochujang, tamari, honey, 1 tsp of the sesame oil, minced garlic, and grated ginger.
Thread the pork cubes onto skewers and brush with half of the gochujang glaze.
Grill the skewers over medium-high heat for 8-10 minutes, turning occasionally and brushing with the remaining glaze.
Toss the sliced cucumber with rice vinegar and the remaining 1 tsp of sesame oil.
Serve the skewers over the cucumber salad, garnished with sesame seeds and sliced green onions.
