Seared Salmon with Steamed Asparagus and Mashed Cauliflower
Pan-seared salmon fillet served alongside creamy cauliflower mash and tender garlic-steamed asparagus, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6.5 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Asparagus spears
1 tsp Ghee
1 clove Garlic, minced
1 tbsp Lemon Juice
Pinch of Sea Salt and Black Pepper
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, season the salmon fillet with sea salt and black pepper.
Heat a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes until crispy, then flip and cook for another 3-4 minutes until desired doneness.
Add the asparagus to the steamer during the last 4 minutes of the cauliflower's cooking time until bright green and tender-crisp.
Transfer the steamed cauliflower to a bowl or food processor, add the ghee and minced garlic, and mash or blend until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the asparagus on the side.
Finish the entire dish with a fresh squeeze of lemon juice.
