Once the potato is done, slice it open lengthwise and fluff the interior with a fork.
Stuff the potato with the cooked ground turkey and sprinkle the shredded cheddar cheese on top.
Return the potato to the oven for 2-3 minutes until the cheese is melted and bubbly.
Top with a dollop of Greek yogurt, the crumbled turkey bacon, and fresh chopped chives before serving.
