Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over cauliflower mash and garlic-sautéed green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
6.5 ounces Salmon Fillet
2 cups Cauliflower florets
2 tablespoons Nonfat Greek Yogurt
1 cup Green Beans
2 teaspoons Olive Oil
2 cloves Garlic
PREPARATION
Steam the cauliflower florets until very tender, about 10 to 12 minutes.
While cauliflower steams, heat one teaspoon of olive oil in a skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then sear for 4 to 5 minutes per side until golden and cooked through.
Remove salmon from the skillet and set aside.
In the same skillet, add the remaining teaspoon of olive oil and minced garlic.
Add the green beans to the skillet and sauté for 5 to 7 minutes until tender-crisp.
Drain the steamed cauliflower and mash with the Greek yogurt until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve with the garlicky green beans and a squeeze of fresh lemon.
