Dice the chicken breast into small, bite-sized pieces and season with sea salt and black pepper.
Heat the avocado oil in a large skillet or wok over medium-high heat.
Add the chicken to the pan and sauté until golden brown and cooked through, about 5-6 minutes.
Remove the chicken from the pan and set aside on a plate.
In the same pan, add the diced carrots and cook for 3 minutes until they begin to soften.
Stir in the minced garlic, grated ginger, and frozen peas, cooking for 1 minute until highly fragrant.
Push the vegetables to one side of the pan and crack the egg into the empty space, scrambling it until fully set.
Add the chilled brown rice, cooked chicken, tamari, and toasted sesame oil to the skillet.
Toss all ingredients together over high heat for 2-3 minutes, allowing the rice to crisp slightly.
Remove from heat and garnish with sliced green onions before serving.
