Preheat your oven to 400°F (200°C).
On a baking sheet, toss the cauliflower florets with the olive oil, half of the sea salt, and half of the black pepper.
Roast the cauliflower for 20-25 minutes until the edges are golden brown and tender.
While the cauliflower roasts, mince the garlic and combine it with the harissa paste in a small bowl.
Rub the harissa and garlic mixture evenly over both sides of the lamb loin chops.
In a separate small bowl, whisk together the Greek yogurt, finely chopped fresh mint, lemon juice, and the remaining salt and pepper.
Heat a cast-iron skillet over medium-high heat. Sear the lamb chops for 3-4 minutes per side for medium-rare, or until they reach your desired level of doneness.
Let the lamb rest for 3 minutes before serving.
Spread the mint yogurt on a plate, top with the roasted cauliflower, and place the harissa lamb chops alongside.
