Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over creamy cauliflower mash with garlic-sautéed green beans, finished with a splash of bright lemon.
INGREDIENTS
6.5 oz Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
2 tsp Extra Virgin Olive Oil
2 tbsp Non-fat Plain Greek Yogurt
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10-12 minutes.
Transfer the steamed cauliflower to a food processor or blender along with the Greek yogurt, salt, and pepper, then process until completely smooth and velvety.
While the cauliflower steams, heat one teaspoon of olive oil in a skillet over medium heat and sauté the green beans and minced garlic for 5-7 minutes until tender-crisp.
Season the salmon fillet generously with salt and pepper on both sides.
Heat the remaining teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes per side, or until the exterior is golden and the fish flakes easily with a fork.
Serve the salmon immediately over a bed of the cauliflower mash with the garlic green beans on the side, garnished with a fresh lemon wedge if desired.
