6.5 oz Wild Atlantic Salmon
120g Sweet Potato (cubed)
150g Green Beans (trimmed)
1 tsp Avocado Oil
2 cloves Garlic (minced)
PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Toss the cubed sweet potatoes with half of the avocado oil and a pinch of sea salt, then spread them on the baking sheet and roast for 20-25 minutes until tender.
While the potatoes roast, season the salmon fillet with sea salt and black pepper.
Heat the remaining avocado oil in a non-stick skillet over medium-high heat and place the salmon skin-side down.
Sear the salmon for 4-5 minutes until the skin is very crisp, then flip and cook for another 3-4 minutes until cooked through.
Remove the salmon from the pan and set aside to rest.
In the same pan, add the green beans and a splash of water, covering for 2 minutes to steam.
Remove the lid, add the minced garlic, and sauté for another 2 minutes until the beans are tender-crisp and the garlic is fragrant.
