6 oz Top sirloin steak
1 bunch Asparagus
0.5 tbsp Ghee
2 cloves Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
0.5 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Olive oil
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Trim the woody ends off the asparagus and toss them on the baking sheet with olive oil, half the sea salt, and half the black pepper.
Roast the asparagus for 12-15 minutes until tender and slightly charred at the tips.
While the asparagus is roasting, pat the steak dry with a paper towel and season both sides with the remaining salt and pepper.
Heat a cast-iron skillet over medium-high heat and sear the steak for 3-4 minutes per side for medium-rare.
Reduce the heat to medium and add the ghee, smashed garlic cloves, rosemary, and thyme to the skillet.
Tilt the pan slightly and use a spoon to continuously baste the steak with the melted herb ghee for about 1 minute.
Remove the steak from the pan and let it rest for 5 minutes to lock in the juices before slicing and serving alongside the roasted asparagus.
