PREPARATION
Cook the brown rice according to package instructions until tender.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the fillet and cook for another 3-4 minutes until the salmon is cooked through and flakes easily.
