6.5 oz Salmon Fillet
150g Cauliflower florets
100g Green beans
1 tsp Olive oil
2 cloves Garlic, minced
1 tsp Lemon juice
PREPARATION
Steam the cauliflower florets until they are very tender, about 10-12 minutes.
While cauliflower steams, pat the salmon fillet dry and season with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through, then remove from the pan and let rest.
In the same skillet, add the green beans and minced garlic, sautéing for 5 minutes until the beans are tender-crisp.
Drain the steamed cauliflower and mash it thoroughly using a fork or immersion blender until creamy.
Stir the lemon juice into the cauliflower mash and season to taste.
Serve the seared salmon over the cauliflower mash with the garlic green beans on the side.
