Herb-Seared Chicken Thighs with Steamed Broccoli and Cauliflower Mash
Pan-seared chicken thighs seasoned with rosemary and thyme, served alongside a creamy cauliflower mash and tender steamed broccoli for a comforting, buttery finish.
INGREDIENTS
7 ounces Chicken Thighs
2 cups Cauliflower florets
1.5 cups Broccoli florets
1 tablespoon Ghee
1 clove Garlic
1 teaspoon Dried Rosemary
1 teaspoon Dried Thyme
PREPARATION
Pat the chicken thighs dry and season both sides with salt, pepper, rosemary, and thyme.
Heat a large skillet over medium-high heat with half of the ghee.
Place the chicken in the skillet and sear for 5-7 minutes per side until golden brown and cooked through.
While the chicken cooks, steam the cauliflower florets in a basket over boiling water until very soft.
Transfer the steamed cauliflower to a food processor or bowl and blend with the remaining ghee and minced garlic until smooth.
Steam the broccoli florets for 4-5 minutes until bright green and tender-crisp.
Serve the seared chicken over the warm cauliflower mash with the broccoli on the side.
