Beef and Rice Stuffed Bell Peppers
Roasted bell peppers stuffed with lean ground beef, nutty brown rice, and aromatic herbs simmered in a savory tomato sauce.
INGREDIENTS
7 oz ground beef
0.25 cup cooked brown rice
2 large bell peppers
0.5 cup tomato puree
0.25 cup yellow onion
1 clove garlic
1 tbsp grated parmesan cheese
0.5 tsp sea salt
0.25 tsp black pepper
0.5 tsp dried oregano
PREPARATION
Preheat oven to 375°F.
Slice the tops off the bell peppers and remove the seeds and membranes.
In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned and onions are translucent.
Stir in the minced garlic, sea salt, black pepper, and dried oregano, cooking for 1 more minute until fragrant.
Remove the skillet from heat and stir in the cooked brown rice and tomato puree until well combined.
Stuff each bell pepper tightly with the beef and rice mixture and place them upright in a baking dish.
Sprinkle the tops with grated parmesan cheese.
Add 0.25 cup of water to the bottom of the dish, cover with foil, and bake for 30 minutes.
Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is golden.
