8 oz Salmon Fillet
150g Yukon Gold Potatoes
100g Green Beans
1 tbsp Avocado Oil
2 cloves Garlic, minced
1/2 Lemon, juiced
Sea salt and black pepper to taste
PREPARATION
Peel and chop the potatoes into chunks, then place them in a pot of salted water and bring to a boil.
Simmer the potatoes for 12-15 minutes until fork-tender, then drain and mash with a splash of hot water or broth and half the minced garlic.
While potatoes cook, season the salmon fillet with sea salt and black pepper on both sides.
Heat half of the avocado oil in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes until crispy.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached, then remove from the pan and let rest.
In the same skillet, add the remaining oil and the green beans, sautéing for 5 minutes until crisp-tender.
Add the remaining minced garlic to the beans for the last minute of cooking, tossing well to combine.
Plate the mashed potatoes and green beans alongside the salmon and finish with a fresh squeeze of lemon juice.
