Scrub the Russet potato thoroughly and pierce the skin several times with a fork.
Place the potato directly on the oven rack and bake for 45 to 50 minutes until the center is tender.
While the potato bakes, cook the bacon in a skillet over medium heat until it reaches a crispy texture.
Remove the bacon from the skillet, let it cool, and then crumble it into small bits.
In the same skillet, brown the ground turkey with garlic powder, sea salt, and black pepper until fully cooked.
Once the potato is done, slice it in half lengthwise and carefully scoop out the flesh into a bowl, leaving a thin shell.
Mash the potato flesh with the Greek yogurt until the mixture is smooth and creamy.
Fold the cooked ground turkey and half of the cheddar cheese into the mashed potato mixture.
Spoon the filling back into the potato skins and top with the remaining cheddar and the crumbled bacon.
Return the stuffed potatoes to the oven for 5 to 8 minutes until the cheese is melted and bubbly.
Garnish with thinly sliced green onions and serve immediately.
