While the vegetables are roasting, heat the remaining olive oil in a large skillet over medium-high heat.
Add the ground turkey to the skillet, breaking it into small crumbles with a wooden spoon or spatula.
Season the turkey with garlic powder, onion powder, and dried oregano, and cook until browned and no longer pink, about 7-8 minutes.
Once the vegetables are finished roasting, transfer them directly into the skillet with the cooked turkey.
Stir everything together for 1-2 minutes to allow the flavors to meld, then remove from heat.
Garnish with chopped fresh parsley and serve warm.
