Cheesy Lentil and Spinach Stuffed Peppers with Herb-Roasted Mushrooms
Oven-roasted bell peppers stuffed with a creamy lentil and spinach filling, served with savory herb-tossed mushrooms and finished with melty mozzarella.
INGREDIENTS
0.75 cup Cooked Lentils
1 large Red Bell Pepper
3 cups Fresh Spinach
1.5 cups White Button Mushrooms
1.5 ounces Part-Skim Mozzarella Cheese
150 grams Nonfat Plain Greek Yogurt
1 teaspoon Extra Virgin Olive Oil
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Slice the bell pepper in half lengthwise and remove the seeds and membranes.
In a non-stick skillet, sauté the spinach with a splash of water until completely wilted, then squeeze out any excess moisture.
In a medium bowl, combine the cooked lentils, wilted spinach, nonfat Greek yogurt, and half of the mozzarella cheese.
Fill each bell pepper half generously with the lentil and spinach mixture.
Toss the sliced mushrooms with olive oil, dried oregano, salt, and pepper on one side of the baking sheet.
Place the stuffed peppers on the other side of the baking sheet and roast for 20 minutes.
Remove from the oven, sprinkle the remaining mozzarella over the peppers, and bake for another 5-7 minutes until the cheese is melted and bubbly.
