Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served with garlicky green beans and creamy mashed sweet potatoes, finished with a squeeze of zesty lemon.
INGREDIENTS
6 ounces Salmon Fillet
180 grams Sweet Potato
110 grams Green Beans
2 teaspoons Extra Virgin Olive Oil
1 teaspoon Grass-Fed Butter
1 clove Garlic
PREPARATION
Peel and dice the sweet potato into small cubes, then place in a pot of boiling water and cook until tender, about 10-12 minutes.
Drain the sweet potatoes and mash them thoroughly with the grass-fed butter and a pinch of sea salt until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crisp and the flesh is flaky.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the remaining teaspoon of olive oil along with the trimmed green beans and minced garlic.
Sauté the green beans for 5-6 minutes until they are tender-crisp and the garlic is fragrant.
Plate the sweet potato mash and top with the seared salmon, serving the garlic green beans alongside with a fresh lemon wedge.
