1.5 oz Soba noodles
1 tbsp Extra virgin olive oil
1 medium Shallot
1 cup Zucchini
1 tbsp Lemon juice
1 tsp Lemon zest
1 tbsp Fresh parsley
1 tbsp Fresh dill
0.25 tsp Sea salt
0.25 tsp Black pepper
0.13 tsp Red pepper flakes
PREPARATION
Bring a pot of water to a boil and cook the soba noodles according to package directions, then drain and set aside.
Pat the prawns completely dry with a paper towel and season them evenly with half of the sea salt and black pepper.
Heat the extra virgin olive oil in a large stainless steel or cast iron skillet over medium-high heat.
Add the finely diced shallot and sliced zucchini to the skillet, sautéing for 3 minutes until the zucchini is tender and the shallot is translucent.
Push the vegetables to the edge of the pan and add the prawns, searing them for 2 minutes per side until they are pink, opaque, and slightly golden.
Stir in the lemon juice, lemon zest, fresh parsley, fresh dill, red pepper flakes, and the remaining salt and pepper.
Add the cooked soba noodles to the skillet and toss everything together for 1 minute to allow the noodles to absorb the bright herb sauce before serving.
