Baked Eggs with Sausage and Spinach
Sautéed chicken sausage and wilted spinach baked with farm-fresh eggs until the whites are set and the yolks remain velvety and rich.
INGREDIENTS
2 links Amylu chicken sausage
2 large eggs
1 cup fresh spinach
0 slice sprouted grain bread
1 tsp hemp seeds
1 tsp chia seeds
1 tsp ground flax seeds
0 tsp extra virgin olive oil
0.13 tsp sea salt
0.13 tsp black pepper
PREPARATION
Preheat your oven to 375°F (190°C).
Slice the Amylu chicken sausage into rounds.
Heat the olive oil in a small oven-safe skillet over medium heat.
Add the sausage rounds to the skillet and sauté for 3-4 minutes until they are lightly browned and fragrant.
Add the fresh spinach to the skillet and stir constantly until the leaves are just wilted.
Use a spoon to create two small wells in the sausage and spinach mixture.
Carefully crack one egg into each well, then season the tops with sea salt and black pepper.
Transfer the skillet to the oven and bake for 8-10 minutes, or until the egg whites are fully set but the yolks are still soft.
While the eggs bake, toast the sprouted grain bread and sprinkle it evenly with hemp seeds, chia seeds, and ground flax seeds.
Remove the skillet from the oven and serve the baked eggs immediately alongside the seeded toast.
