While vegetables roast, rinse the black lentils under cold water and place them in a medium saucepan.
Add the vegetable broth, minced garlic, and fresh thyme to the saucepan and bring the mixture to a boil.
Reduce the heat to low, cover, and simmer for 20-25 minutes until the lentils are tender but still hold their shape.
Drain any remaining liquid from the lentils and remove the thyme sprigs.
Spread the Greek yogurt into the bottom of a wide bowl as a creamy base.
Top the yogurt with the warm braised lentils and the roasted vegetables.
Sprinkle the hemp seeds over the top for an extra protein boost and a light crunch.
