1 tbsp Basil pesto
2 tbsp Sundried tomatoes
1 cup Fresh baby spinach

1 tsp Lemon juice
PREPARATION
Bring a medium pot of salted water to a boil and cook the chickpea pasta according to package directions until al dente.
While pasta cooks, slice the chicken breast into bite-sized pieces and season with sea salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat and sauté the chicken until golden brown and cooked through, about 5-7 minutes.
Add the sundried tomatoes and baby spinach to the skillet, stirring until the spinach is just wilted.
Drain the pasta, reserving two tablespoons of the pasta water, and add both to the skillet with the chicken.
Stir in the basil pesto and lemon juice, tossing everything together until the pasta is well coated and the sauce is glossy.
