PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Toss the halved brussels sprouts with half of the olive oil, a pinch of sea salt, and black pepper.
Spread the sprouts on the baking sheet and roast for 20-25 minutes until the edges are golden and crispy.
While the sprouts roast, place the cubed sweet potato in a small pot of boiling water and cook for 10-12 minutes until fork-tender.
