Preheat your oven to 400°F.
Scrub the Russet potato thoroughly, pierce it several times with a fork, and rub the skin with olive oil and a pinch of sea salt.
Place the potato directly on the oven rack and bake for 50 to 60 minutes until the skin is crisp and the inside is tender.
While the potato bakes, cook the bacon slice in a skillet over medium heat until crispy, then remove and crumble into small pieces.
In the same skillet, brown the ground turkey with garlic powder, sea salt, and black pepper until fully cooked through.
Once the potato is finished, slice it open lengthwise and carefully scoop the flesh into a mixing bowl, leaving a thin shell.
Mash the potato flesh with the non-fat Greek yogurt and half of the sharp cheddar cheese until the mixture is smooth and combined.
Fold the browned ground turkey and half of the crumbled bacon into the mashed potato mixture.
Spoon the filling back into the potato shell and top with the remaining cheddar cheese and bacon bits.
Return the potato to the oven for 5 minutes until the cheese is melted and bubbly, then garnish with fresh green onions before serving.
