6.5 oz Wild Atlantic Salmon Fillet
120g Yukon Gold Potato
1.5 cups Green Beans
1 tsp Ghee
1 clove Garlic
PREPARATION
Peel and dice the Yukon Gold potato into small chunks, then boil in a pot of salted water until fork-tender.
While the potato boils, place a steamer basket over another pot of simmering water and steam the green beans for 5-7 minutes until they are crisp-tender and bright green.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat a non-stick skillet over medium-high heat and add half of the ghee; once hot, sear the salmon skin-side up for 4 minutes.
Flip the salmon and cook for another 3-4 minutes until the internal temperature reaches 145°F and the skin is crispy.
Drain the potatoes and return them to the pot, adding the remaining ghee and the minced garlic clove.
Mash the potatoes until smooth and creamy, adding a splash of hot water if needed to reach your desired consistency.
Plate the garlic mashed potatoes alongside the steamed green beans and top with the seared salmon fillet.
