5 oz Wild Sockeye Salmon
1.5 cups Cauliflower florets
1 cup Green beans
2 tsp Olive oil
1 tsp Ghee
1 clove Garlic
1 wedge Lemon
PREPARATION
Steam the cauliflower florets in a basket over boiling water for ten to twelve minutes until very soft.
Add the green beans to the steamer for the last five minutes of cooking until they are bright green and crisp-tender.
Transfer the steamed cauliflower to a bowl and mash thoroughly with ghee, minced garlic, and a pinch of sea salt until creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the pan and sear for four minutes on the skin side until crispy, then flip and cook for another three minutes.
